Day 15- Weigh in! -January 10, 2011

Hello all!

Today is my second weigh in and I am so very excited. I am down another 1.6 pounds; I am almost out of the 190's... forever!! I am starting p90x today so the weight should start coming off faster now.



















Also, sorry for the gap in posts the last few days. I had to make a cake this weekend. My posts will return to normal now ^_^

Here is to a good first week of p90x!!

Day 11- January 6, 2011

I have not uploaded any pictures of my meals lately because my SD card is "semi-corrupted". I found a way around it though, hehe. So here is a update of all the things I have missed:





















I love english muffins with apple butter. It reminds me of my mom. I just noticed that this made a smiley face!! (That also reminds me of my momma)































I got this recipe from Skinnytaste.com (you will hear that a lot) These are strawberry squares and are only one point a piece. Not too bad if you have a sweet tooth.


















This is another skinnytaste.com recipe. These chicken enchiladas are delicious!!! I think what makes this dish is that you make the enchilada sauce from scratch. ♥


















And last but not least: Skinny spinach dip! (from skinnytaste.com of course) I love spinach dip with a passion and having a lightened version is always a plus.

I am a day late, sorry about that! I am busy making a cake for my neighbor's daughter's birthday. I made over 50 royal icing flowers and they actually turned out decent. =)

Day 8- Nutritional Analysis January 3, 2011



Day 8- Weigh in! January 3, 2011

Today is my first weigh in!! I went from 195 to 192.4. That is 2.6 pounds in one week. YAY! ♥

I am starting the P90x 90 day challenge today as well. Hopefully I will see even more progress next Monday.

I caved and and had 2 soft tacos from taco bell, but I still stayed under my target calorie intake. I never knew how much salt was in two tacos! =(

Day 5- Nutritional Analysis

Day 5- December 31, 2010

This is the last day of the year 2010! I am really looking forward to 2011 and seeing what the new year will bring.

Here is what I ate today:

First are mini omelets. Instead of broccoli I used mushrooms, onions, and spinach. They were really good. Then I had shrimp and shrimp salad on cucumbers.
